A light and fruity home made chutney

Ingredients:
• 450g pears peeled, cored and chopped
• 900g cooking apples peeled, cored and chopped
• 400g onions chopped
• 1 crushed garlic clove
• 250g raisins
• 1 litre cider or white wine vinegar
• 1 tbsp ground cinnamon
• 2 tbsp ground turmeric
• 25g salt
• 450g dark brown sugar
Method:
• Place the pears, apples, onions, garlic, raisins and vinegar in a preserving pan
• Bring to the boil and then simmer for 20mins
• The pears and apples should be soft but keep their shape
• Add the spices, salt and sugar
• Stir until all the sugar is dissolved
• Reduce the heat and simmer for 45-60mins
• The liquid should have evaporated and the chutney should be thick
• Ladle the chutney into preserving jars
• Leave to mature for 1-2months
