During this class we will introduce you to sustainability of seafood.
You will learn about the different categories of fish and what to look for when buying fresh fish and shellfish.
This class will give you the opportunity to gain confidence in gutting and filleting fish, de-veining, cleaning & preparing shellfish and crustaceans. All the fish and seafood used in the class will be seasonal, sustainable and caught in British waters. So the selection will be different depending on the time of year and availability of catch.
We will demo smoking a mackerel.

- Garlic scallops,
- Thai king prawns.
All easy recipes that you will be able to prepare with confidence in your own kitchen.
